Kicking off this week with a little work wear inspiration for you!  I have been wearing so many skirts and dresses to work lately.  With warm/hot weather sneaking in, I feel this trend will continue well into summer for me.  When shopping for work clothes, I look for a few different things – comfort, washing directions, and does it wrinkle easy.

Most days at work, I sit at my desk working away on my computer.  While I like what I wear to be professional and fashionable, I also want to be comfortable.  You ever have those morning where you consider wearing your pjs to work because you are too comfy too change. I like having comfy things that are also office friendly, it’s a win-win!

This navy floral dress is so comfy that I want them to make it in more colors!  It’s a super soft and thick jersey knit style material. The fit is a shift style, but slightly comes in at the waist to still give a little shape.  It’s probably one of my comfiest work dresses! The print and flutter sleeve detail give it a little feminine flair.

My other favorite thing – it’s a wrinkle free work dress!  This fabric is one of my favorites to buy clothes in because it rarely needs ironing.  Occasionally, I run late in the morning and having a few ready to go work pieces is great on these days.

You can also toss on a denim jacket and flat sandals or wedges with this dress and have a ready to go weekend or casual outfit.  Speaking of weekends, how was yours?  I celebrated a few birthdays, ate yummy food, and then ended with a relaxing Sunday at home.  It was a pretty good mix of fun and relaxation.  Hope you all have a wonderful week!

Happy Friday!!  I feel like this post has been awhile in the making.  It’s no secret that I love cooking.  When I did Whole 30 a few years ago, it reminded me how I much I loved it and how much I loved coming up with my own healthy creations.

I have been wanting to share recipes here on the blog for over a year, but I always stopped myself because it’s kinda scary.  Also when I’m creating things in the kitchen, I often don’t pay attention to what I’m tossing in the pan.

I’m hoping to try and bring you more recipes that fit in with my healthy eating lifestyle.  If you try this recipe out, I would love your feedback so I can learn to write easy to follow recipes!

This Mediterranean Chicken recipe is one I came up with years ago when doing Whole 30.  I was trying to find meals that included healthy fats like olives and avocados.  I also wanted quick and easy recipes that I could put together in 30 minutes or less, use for meal prep, and freeze.

I start with thin sliced chicken breasts (although you can use regular chicken breasts too, just bake longer) lightly seasoned and baked, and then topped with a mix of roasted red peppers, green olives, and fresh basil.

Occasionally, I will roast my own red bell peppers in the oven with a little olive oil.  To make this recipe even easier, I buy the deli-sliced roasted red bell peppers, so it’s as easy as just opening a jar.  Just make sure the ingredients are Whole 30 approved!

Mediterranean Chicken

Easy Mediterranean inspired chicken breast recipe with under 10 ingredients and ready in 30 minutes.
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Course Main Course
Cuisine Italian, Mediterranean
Servings 4 chicken breasts

Ingredients
  

  • 4 thin sliced chicken breasts
  • pinch salt and pepper
  • 1 tbsp italian seasoning
  • 12-16 pitted green olives
  • 1 cup roasted red bell peppers
  • 1/2 cup fresh basil

Instructions
 

  • Preheat oven to 350 degrees.
  • Add chicken to oven safe baking dish. Sprinkle each chicken breast with Italian seasoning, salt, and pepper.
  • Bake chicken for about 15-20 minutes.
  • While chicken bakes, chop basil and slice olives. (I make about 4 slices per olive.) If using whole roasted peppers, thinly slice each pepper. (You can also roast your own red bell peppers with olive oil too.)
  • Plate chicken breasts and top with 1/4 cup roasted red bell peppers, 10-12 olive slices, and a sprinkle of chopped basil per breast.

Notes

Serve alongside vegetable of choice. Great for Meal Prep!

Hello Ladies and Happy May!  I get so excited for this month every year! It’s filled with so many birthdays of family of friends, the start of summer and pool season, and our last month to spend outdoors before that Texas HEAT arrives.  I have so many fun outfit posts coming for you in May, but first let’s talk about your April favorites!

A reminder on how I figure out which items ya’ll loved –

I use an affiliate program called Rewardstyle. If you click on a link from my blog or social media that takes you to a product page on a retailer’s site, Rewardstyle is able to track that your visit to that site originated from me. The Rewardstyle affiliate program pays me a commission per purchase made. Basically, if you click on one of my links and end up making a purchase, I earn a small commission.

Because I use this service I also have access to certain data analytics. This means I can see and keep track of which items are clicked on and which lead to a purchase.  I do not see who clicked on the link or what items might have been purchased. Happy Monday friends!!  How was your weekend?  I went to 2 baby showers, ate yummy cake, sipped champagne, and caught up with my girlfriends. Somewhere in there, I also fit in some relaxing down time too.   Overall, it was a pretty fabulous weekend.

This blue off the shoulder top has been on major repeat this month for so many of my lunches and dinners with friends!  It’s a top you can easily dress up or down with a change of shoe or jean color.  I wore this striped top with my dark wash jeans and block heel sandals for a dinner with friends (seen here on IG) and with wedges for a casual lunch date.  You could also add in white jeans to dress it up a little.  It’s a thin material, but not see through so good for warm or slightly cool weather.

I’m loving this light blue shade paired with my rose gold jewelry.  With off the shoulder tops, I usually go without necklace and opt for a good statement earring instead.  My rose gold earrings were PERFECT with this blue and white stripe for a casual spring outfit. Sometimes I feel like light blue is a good neutral for pairing with bold colors.  A bright pink or yellow statement earring would work with this top too. Silver jewelry would also work really well with this light blue shade to keep the look more neutral and spotlight the blue more.
